My daughter loves Ratatouille : )

 12 cups Tomato Sauce
 1 Garlic (big)
 2 Egg Plant (Thin and thin sliced)
 1 Green Squashes ( thin sliced)
 2 Zucchinis (thin sliced)
 3 Green and Red Pepper (thin sliced)
 3 Medium size Potatoes (thin sliced)
 3 tbsp Olive Oil
 Sea Salt
 Black Paper
 Fresh Oregano
 Fresh Basil
 7 Medium size Tomatoes

Preheat oven at 190 degree Celsius.

Bring 3 cups of water to rolling boil. Slice the potatoes. Drop in water and boil until par cook. Drain the potatoes and cool down.

Slice rest of veggies -squash, peppers, eggplant, zucchini, some tomatoes.

Spray baking dish with cooking spray, Spread layer of Tomato sauce, minced garlic, some thyme leaves, fresh basil, fresh leaves of oregano , some salt and olive oil. Then layer sliced veggies. Make a spiral stack of veggies slices. Drizzle with olive oil, some salt, leaves of oregano, thyme and basil.

Cover with baking paper and bake until all veggies are tender. You will see tomato sauce bubbling on the sides.
