Sweet Corn Gazpacho

 3 corncobs
 250 g cherry yellow tomatoes
 1 yellow pepper
 1 cucumber, pilled.
 2 tbsp lemon, juice
 ¼ cup extra virgin avocado oil
 pinch of sea salt flakes

Boil the corn. Blend all ingredients together in high speed blender until smooth and season to taste.

Serve with corn kernels, cherry tomatoes and herbs. You can add some slices of avocado.

* This soup is better on the second or third day.
